All-American Barbecued Roaster Chicken Recipe

All American Barbecued Roaster Chicken Recipe creates a basting sauce for a roaster chicken which uses vegetable oil, red wine vinegar, paprika, ground black pepper and salt giving a delicious taste to the chicken dish.


INGREDIENTS
1 Roaster Chicken (5-7 pounds)
Salt
Ground black pepper
1 cup vegetable oil
1/3 cup red wine vinegar
1 teaspoon paprika

DIRECTIONS
1: Using a conventional charcoal grill, prepare coals at least 30 minutes before barbecuing. Stack briquets in a pyramid shape and light. For added smoky flavor place mesquite, hickory, oak, apple, or cherry wood among briquets just before roaster is placed on grill. To prevent flare-ups, place a heavy aluminum or foil pan in center of grill. Position cooking grid about 6 to 8 inches above coals. Cover roaster with grill lid or tent made from foil.
 
2: Remove giblets and leaf fat from roaster; rinse and pat dry. Sprinkle inside and out with salt (if desired) and pepper; tie wings and legs close to body. Plan to grill roaster 15 minutes per pound. If faster cooking is desired, split bird in half using a heavy, sharp edged chefs knife.
 
3: Basting sauce: In a small bowl, combine oil, vinegar, paprika, 2 teaspoons salt, and 1/2 teaspoon pepper; beat well until thick. After 30 minutes grilling time, turn roaster and brush with sauce. Cover and continue grilling, turning and brushing with sauce every 15 minutes, until done.
 
4: INTERNATIONAL BASTING SAUCE VARIATIONS: Italian Roaster: Prepare basting sauce as directed above, adding 2 cloves mashed garlic, 1 cup catsup, 1 teaspoon crumbled dried oregano, and 1/2 teaspoon crumbled dried basil to mixture. French Roaster: Prepare basting sauce as directed above, adding 1/3 cup minced shallots, 1/3 cup Dijon-style mustard, and 1 teaspoon crumbled dried tarragon. German Roaster: Prepare basting sauce as directed above, adding 1/2 cup beer, 2 tablespoons molasses, and 2 tablespoons caraway seeds to mixture. Chinese Roaster: Prepare basting sauce as directed above, adding 1/3 cup soy sauce, 2 cloves mashed garlic, and 1 teaspoon ground ginger or 1 tablespoon grated fresh ginger to mixture.
