Texas Style Cocktail Ribs

Texas Style Cocktail Ribs Appetizer Recipe bakes pork rib-lets which are smothered with a sauce of garlic, red chiles, cilantro, cumin, sugar, Worcestershire Sauce, chili sauce, catsup and vinegar resulting in this tasty pork rib recipe.


INGREDIENTS
8 pounds country-style pork
SAUCE
3 cloves garlic, chopped
2 small hot dried red chiles
1 tablespoon chopped cilantro (optional)
1 teaspoon ground cumin
1 teaspoon salt
1/4 cup brown sugar
2 tablespoons Worcestershire sauce
2 cups chili sauce
2 cups tomato catsup
2 cups white vinegar
Few drops hot-pepper sauce


DIRECTIONS
1: Preheat oven to 325° F. TO PREPARE THE SAUCE: Combine garlic, chiles, cilantro (if used), salt, sugar, and Worcestershire sauce in a blender. Blend well.
 
2: In a saucepan, combine garlic mixture, chili sauce, catsup, vinegar and hot pepper sauce. Simmer 25 minutes, uncovered. Sauce will be thick and will thicken even more as it cools.
 
3: Place riblets in a large roasting pan. Pour sauce evenly over the ribs. Cover and bake 2 hours.
 
4: Preheat broiler or prepare a charcoal fire. Grill ribs for 6 to 8 minutes or broil for 3 to 4 minutes, turning them once and basting with sauce until they are browned and crusty. Charcoal grilling gives the most authentic flavor.
