Chicken and Mac Casserole Recipe

Chicken and Mac Casserole Recipe uses macaroni, minced onion, bell pepper, celery, garlic, butter, corn, cream of chicken soup, chicken, yogurt and bread crumbs in creating this delicious chicken casserole recipe.


INGREDIENTS
1 package (14 oz) macaroni and cheese dinner
2 tbsp instant minced onion
4 tbsp chopped celery
4 tbsp chopped green pepper
2 garlic cloves, minced
2 tbsp butter or margarine
1 15 1/4 oz can whole kernel corn, drained
2 10.5 oz cans cream of chicken soup
2 pounds boneless skinless chicken thighs
1 tbsp salt
1/2 cup yogurt
2 tbsp snipped parsley
2/3 cup buttered bread crumbs


DIRECTIONS
1: Place oven rack under broiler about 6 inches from broiler element. Turn oven broiler on. Place chicken in a large bowl and sprinkle with salt. Place yogurt into bowl with chicken and toss chicken in yogurt to coat well. Place chicken on wire racks over a sheet pan.
 
2: Place chicken under broiler and broil for 20 minutes turning chicken over at 10 minutes of broiling (Charring is good.) Check chicken with an instant read thermometer for an internal temperature of 175°F. Cut chicken into bite size pieces. Set chicken aside. Turn off broiler and heat oven to 350°F.
 
3: Sauté onion, celery, green pepper and garlic in butter in a skillet. Place sautéed vegetables into a large bowl. Add the corn, soup, chicken and prepared dinner to the bowl and mix all well to combine. Put into a greased casserole dish.
 
4: Combine parsley and bread crumbs. Sprinkle over top of casserole mixture. Bake, covered at 350°F for 25 minutes or until heated through. Serves 8.
