Egg Nog Recipe

Egg Nog Recipe uses eggs, sugar, milk, cloves, cinnamon, heavy cream, nutmeg, vanilla and bourbon or rum to make this very tasty egg nog recipe.


INGREDIENTS
6 egg yolks
3/4 cup sugar
2 cups milk
2 whole cloves
pinch cinnamon
1 cup heavy cream
1 tsp freshly grated nutmeg
1 1/2 tsp vanilla
2 Tbl bourbon or rum
4 egg whites


DIRECTIONS
1: Separate the egg yolks from the egg whites and set both aside.
 
2: In a large sauce pan, add the sugar and milk and stir well. Turn heat to medium to gradually begin to heat the milk. We want to bring the milk to near boil but not to boiling. Beat the egg yolks to make one yolk mixture. Watch the milk where it touches the pan. When bubbles begin to form, remove the milk from the heat.
 
3: With a whisk slowly but continuously, stir the egg yolks. Add hot milk to the egg yolks a tablespoon at a time, stirring continuously, until 6 or 7 tablespoons of milk has been added to the yolks. After the egg yolks have been tempered by adding the tablespoons, while still stirring continuously, add the remaining milk and stir to mix well. Add the other ingredients, excluding the egg whites, to the egg mixture and mix well to combine.
 
4: Using a whisk or electric mixer, beat the egg whites until they form stiff peaks. Fold the egg whites into the egg nog mixture but do not beat the whites in. Refrigerate the egg nog to chill. Serve and enjoy.
