Rompope Recipe slowly simmers milk, sugar, stick cinnamon, ground almonds, vanilla extract and egg yolks before adding light rum to mix this very tasty beverage recipe.


INGREDIENTS
1 quart milk
1 cup sugar
1 stick cinnamon
1/4 cup finely ground almonds
1 teaspoon vanilla extract
8 egg yolks
1 cup light rum, brandy, or grain alcohol


DIRECTIONS
1: Put milk, sugar, and cinnamon stick into a saucepan. Heat to simmering, and simmer gently, stirring constantly, about 10 minutes.
 
2: Remove from heat and remove cinnamon stick. Add almonds and vanilla extract.
 
3: Beat egg yolks until thick and lemon-colored. Gradually beat into milk. Return to heat and cook over low heat, stirring constantly, until mixture coats a spoon. Cool to room temperature.
 
4: Mix in rum and pour into a large bottle with screw lid. Refrigerate until ready to serve.
