Hamburgers with Roquefort Mayonnaise

Hamburgers with Roquefort Mayonnaise Recipe creates unique and tasty sauce with Roquefort cheese, mayonnaise, wine vinegar and hot sauce to complement hamburger using red onions grilled and basted with barbecue sauce.


INGREDIENTS
3 lb hamburger meat, 75/25 blend recommended
8 large hamburger buns, 4 to 5 inches in diameter
1 red onion
salt and pepper, to taste
8 oz Roquefort cheese, crumbled
2/3 cup mayonnaise
2 tsp red wine vinegar
1 tsp hot pepper sauce
1 1/3 cups barbecue sauce of choice


DIRECTIONS
1: Divide hamburger meat into 8 equal portions. Make a 4 to 5 inch hamburger patty out of each portion.
 
2: Cut the red onion to make 8 slices, 1/2 inch thick. Prepare barbecue grill to about a medium heat. Place onion slices on grill. Brush slices with barbecue sauce, and turning occasionally, brush with sauce, turn, and cook until onions are tender and glazed.
 
3: Prepare Roquefort mayonnaise by mixing all ingredients together and mix until well blended.
 
4: Place buns on grill, cut side to heat, until lightly toasted. Sprinkle hamburger patties with salt and pepper. Grill patties until cooked through, about 5 minutes per side, or until reaching the desired doneness. Place patties on bottom halves of buns. Top patties with an onion slice, Roquefort mayonnaise, then bun tops.
