Dad's Country Breakfast Skillet Recipe uses bacon, red potatoes, green peppers, eggs, cheddar cheese, and parsley in creating this unique and very tasty breakfast recipe.


INGREDIENTS
3/4 pound bacon
1 cup red potatoes, diced
1/2 cup green peppers, chopped
4 eggs
1/4 cup cheddar cheese, shredded
parsley, optional, to taste
salt, optional, to taste
pepper, optional, to taste


DIRECTIONS
1: Cut the bacon into 1-inch pieces. Place the bacon pieces into a skillet over medium heat. Cook until the bacon is crisp. Drain half of the fat. Remove the bacon from the skillet and set aside.
 
2: Return the skillet to the stove-top over medium heat. Add the potatoes and the peppers to the pan. Cook until the potatoes are tender and golden brown, about 8-10 minutes. Place the potato and bacon mixture into a bowl. Place the skillet back on the stove top.
 
3: Add four eggs into the skillet without stirring. Let them cook for 1 minute or until the egg whites set. Carefully place the potato and bacon mixture around the eggs, sprinkling the cheese on top. Cook for 1 minute.
 
4: Allow the skillet to cool, then serve!
