INGREDIENTS

  • 3 lb. Yukon Gold potatoes
  • 1 cup mayonnaise
  • 1/2 cup sweet pickle relish
  • 1 tbsp prepared yellow mustard
  • 1 1/2 tsp cider vinegar
  • 1 tsp celery seed
  • 1/4 tsp paprika
  • 1/4 cup onion, diced
  • 1 1/2 tsp fresh dill, chopped

DIRECTIONS

  • Peel the potatoes and cut into 1 1/2-inch chunks.
  • Place the potatoes into a large pot and cover with water. Bring the water to a boil and cook the potatoes for 15 to 20 minutes until the potatoes are fork tender. Drain potatoes in a colander and douse with cold water to stop the cooking.
  • Place the mayonnaise and vinegar into a large bowl and stir to mix well (this breaks the mayonnaise down a little.) Add the remaining ingredients, except the salt, one at a time and stir to mix well.
  • Place the potatoes into the mayonnaise mixture and gently toss to coat the potato chunks well. Season the potato salad with salt and pepper, to taste. Cover the bowl and place the salad into the refrigerator to chill before service.
