INGREDIENTS

  • 6 1/2, 7, or 9 1/4-ounce can tuna, drained
  • 1 tablespoon lemon juice
  • 2 hard-cooked eggs
  • 1/4 cup thinly sliced dill pickle
  • 2 tablespoons thinly sliced green onion
  • 1/4 teaspoon salt
  • Dash pepper
  • 3 English muffins
  • 3 medium tomatoes
  • Butter or margarine
  • Boston or Bibb lettuce
  • Mayonnaise or salad dressing

DIRECTIONS

  • Break one 6 1/2, 7, or 9 1/4-ounce can tuna, drained, into chunks; sprinkle with 1 tablespoon lemon juice.
  • Combine tuna; 2 hard-cooked eggs, coarsely chopped; 1/4 cup thinly sliced dill pickle; 2 tablespoons thinly sliced green onion; 1/4 teaspoon salt; and dash pepper. Toss lightly and chill thoroughly.
  • Split 3 English muffins in half; toast, then spread with softened butter or margarine. Thinly slice 3 medium tomatoes into 18 slices. Top each buttered muffin half with Boston or Bibb lettuce, 3 tomato slices, and tuna-egg mixture.
  • Garnish each sandwich with dollop of mayonnaise or salad dressing.
