Tuna Croquettes Extraordinaire Recipe takes tuna to a higher level using tuna, eggs, Panko bread crumbs, lemon juice, Dijon mustard, kosher salt, green onions and black pepper to create a tasty tuna croquettes recipe.

INGREDIENTS

  • 1 (7 ounce) pouch white Albacore tuna, drained and separated
  • 2 large eggs, lightly beaten
  • 1/4 cup plain Panko bread crumbs
  • 1 tsp. lemon juice
  • 2 tsp. Dijon mustard
  • 1/2 tsp. kosher salt
  • 2 green onions, finely chopped
  • 1/4 tsp. black pepper, freshly ground
  • 1/2 cup plain Panko bread crumbs

DIRECTIONS

  • Combine first 8 ingredients in a medium size bowl. Using a spatula, mix and combine all ingredients well but do not mash into a paste.
  • Line a sheet pan with parchment paper. Using a 2 Tbl. or 1 oz. scoop, lightly fill the scoop with loosely packed tuna mixture. Place scoop of tuna mixture on parchment paper. Repeat, without croquettes touching, until all tuna mixture is on parchment paper. IMPORTANT: let croquettes rest for 15 minutes - to allow excess moisture to drain from croquettes. Place 1/2 cup Panko bread crumbs into large bowl.
  • Using a thin egg turner, lift one croquette from parchment paper and place on bread crumbs. Using fingers, cover top of croquette with crumbs. Gently press croquette until about 1/2 inch in thickness. Press crumbs into sides of croquette and gently form the croquette into a round disk. Gently turn croquette over and coat with crumbs. Remove coated croquette to parchment paper. Repeat with remaining scoops until all croquettes are coated with bread crumbs.
  • Place large skillet (large enough to hold all 8 croquettes without touching - if skillet of adequate size is not available, the croquettes will have to be fried in batches) on medium heat. Add enough olive oil to just coat the bottom of the skillet. Once olive oil is shimmering, add croquettes to skillet (not touching) and cook for 3 minutes. Turn croquettes over and cook for another 3 minutes. Remove croquettes to serving platter. Enjoy!!
