INGREDIENTS

  • 2 lbs fresh sweet potatoes
  • 1 cup butter
  • 2 cups sugar
  • 1 cup milk
  • 4 eggs, lightly beaten
  • 3/4 tsp. nutmeg, ground
  • 2 tsp. vanilla extract
  • 2 9-inch deep crust pie crusts

DIRECTIONS

  • Preheat oven to 400°F. Thaw pie crusts if frozen. Wash sweet potatoes and pat dry. Lightly coat each potato with vegetable oil. Place potatoes on a baking sheet with space between potatoes. Bake potatoes for 1 hour and 10 minutes. Remove potatoes from oven and allow to cool. At some point, oven must be at 350°F. Reduce heat now or turn off heat and reheat oven for baking pies.
  • In a bowl, combine butter, sugar, milk, eggs, nutmeg and vanilla. Mix well to combine.
  • Once potatoes have cooled, peel potatoes and place into a large mixing bowl. Mash potatoes to remove all large lumps. Add mixture of the other ingredients to the potatoes. Using a mixer, beat potato mixture to a smooth consistency. Remove any potato fibers from the mixer blades which might build up during beating.
  • Pour potato mixture into the two pie shells. Place the pies onto baking sheets and place onto middle rack of 350°F oven. Bake for 55 to 60 minutes. Pies are done when a toothpick inserted into center of pie is clean when removed from pie.
