INGREDIENTS

  • 2 cups flour
  • 2 tablespoons sugar
  • 3/4 cup cold butter, cut into small pieces
  • 1 egg, separated
  • 1/4 cup ice water
  • 1 21 oz. can of cherry pie filling
  • 1 cup confectioner's sugar
  • 1 Tbl. milk
  • 1 tsp. vanilla extract

DIRECTIONS

  • Place the flour into a medium sized bowl. Place the butter into the bowl of flour. Using a cutter, or utensils of choice, work the butter into the flour until the butter is about the size of a small pea.
  • Combine the egg and the water, mix well. Gradually work the egg mixture into the flour mixture mixing well. The mixture will be a little difficult to combine and form into one piece of dough. Form the dough into a rectangular log and wrap in plastic wrap. Place into the refrigerator for a couple of hours if you find the dough to dry to work with.
  • Preheat the oven to 350°F. Roll the dough out on a well floured work station into the shape of a rectangle about 8 x 16 inches and about 1/4 inch thick. Using a sharp knife, cut the rectangle into 8 squares.
  • Place about 2 tablespoons of filling onto the lower section of each square. Fold the top edges of the square over to meet the bottom for a rectangular turnover, or bring a corner over to the opposite corner to from a triangular turnover. Press the edges together and use the tines of a fork pressed into the dough to close the turnovers. Use a knife to puncture the tops of the turnovers to vent steam. Place in oven for 20 to 25 minutes or until golden brown. Combine powdered sugar, milk and vanilla to make glaze. When turnovers have cooled, cover with glaze.
