INGREDIENTS

  • 6 fresh tomatoes
  • 2 c. cottage cheese
  • 1/4 c. chopped fresh chives
  • 1/4 c. chopped fresh green onions
  • 1/4 c. half and half
  • Salt to taste
  • Mayonnaise
  • Fresh parsley

DIRECTIONS

  • Cut each tomato 3/4 of the way down into 6 wedges, then separate wedges slightly.
  • Mix the cottage cheese, chives, green onions, half and half and salt and place in center of each tomato.
  • Garnish with mayonnaise and fresh parsley sprigs, if desired.
