INGREDIENTS

  • 1 ready to fry 2 1/4 lb. fryer
  • 1 1/2 teaspoon salt
  • 3/4 teaspoon pepper
  • 1/2 cup flour
  • 1/2 cup fat or oil
  • 2 cups water

DIRECTIONS

  • Cut chicken in frying pieces and coat with seasoned flour.
  • Brown quickly on all sides in hot oil in large skillet.
  • Pour off oil. Add water. Cover and simmer until chicken is tender, about 30 minutes. Add more seasoning if necessary.
  • Variation: Substitute 1 cup white wine for 1 cup water or, if desired, milk or half milk and half water may be substituted for all the water. Vary seasoning by adding 1 to 2 teaspoons poultry seasoning, ground marjoram, or sage to the flour.
