INGREDIENTS

  • 1 lb. pasta, of choice, any type
  • 2 cups broccoli florets
  • 1 1/2 cups zucchini, cut into 1/4 inch slices
  • 1 cup fresh asparagus, cut into 2 inch segments
  • 1 cup snow peas, stringed and cut in half
  • 3 Tbl. Olive oil
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, chopped
  • 3 lbs. shrimp, shelled and deveined
  • 2 cups fresh tomatoes, diced
  • 2 tsp. basil, ground
  • 6 Tbl butter
  • 1 cup heavy cream
  • 1/4 cup chicken stock
  • 3/4 cup parmesan cheese, grated

DIRECTIONS

  • Cook pasta according to package instructions. In a large pot, boil broccoli, zucchini, asparagus and snow peas until fork tender. Broccoli will take long than other vegetables to cook.
  • In a skillet over medium heat, add 2 Tbl. olive oil. When oil is hot, add mushrooms and 2 cloves garlic. Cook, stirring occasionally until mushrooms are brown around the edges. Add the shrimp, stirring well. Cook until shrimp are pink, about 2 to 3 minutes. Do not over cook. Set aside. Covered. In a second skillet over medium-high heat, add 1 Tbl. olive oil. Add diced tomatoes, 1 clove garlic and basil. Stir to mix well. Lower heat and cook until tomatoes are tender.
  • Using spider or large slotted spoon, remove broccoli and other vegetables from pot and place into a colander to drain. Once drained, place colander with vegetables onto pot of boiling water, lower heat to low to keep vegetables warm and cover.
  • In a large skillet, melt butter. Add heavy cream and bring mixture to a boil. Add chicken broth; bring back to boil. Add Parmesan cheese, stir well to combine. Add broccoli and other vegetables in colander to the skillet and stir/toss in sauce. Add pasta to the heavy cream mixture and toss well to combine. Heat over reduced heat to heat well. Place pasta and vegetables into a 9-inch x 13-inch casserole dish to cover bottom of dish. Cover the pasta mixture with the shrimp mixture. Place strip of tomatoes down the center of the dish from one end of dish to the other. Serve.
