INGREDIENTS

  • 1 pound firm white ocean fish, cut into small cubes
  • Juice of 8 to 10 limes
  • Half a white onion, thinly sliced and separated into rings
  • 1 tomato, peeled and diced
  • 2 canned jalapeno chiles, seeded and chopped
  • 2 tablespoons oil
  • 2 tablespoons vinegar
  • 2 tablespoons chopped cilantro leaves or 1/2 teaspoon dried oregano
  • Green leaf lettuce
  • 1 avocado, peeled and sliced

DIRECTIONS

  • Place the fish in a glass or porcelain bowl. Pour the lime juice over the fish, using enough juice to cover the fish, and marinate at least 4 hours or overnight Stir occasionally to be sure all surfaces of the fish are "cooked" by the juice.
  • Add the onion, tomato, chiles, oil, vinegar, and cilantro and mix gently. Refrigerate another 2 hours.
  • Just before serving place the lettuce leaves on individual plates, arrange the seviche on top, and garnish with the avocado slices.
