INGREDIENTS

  • 1 tbsp butter
  • 1/4 cup onion, finely chopped
  • 1/2 tsp salt
  • 1 cup milk
  • 1 bay leaf
  • pepper, sprinkle
  • 1 lb. baking potatoes, cut into 1/8-inch slices
  • 1/3 cup grated Gruyère or cheddar cheese

DIRECTIONS

  • Note: Evenly sliced potatoes are one of the secrets to a good potato scallop. Use a mandolin slicer or food processor to ensure equal thickness.
  • Melt butter in medium saucepan on medium. Add onion and salt. Cook for about 3 minutes, stirring often, until onion is softened.
  • Add milk, bay leaf and pepper. Stir. Add potatoes. Stir. Cook for about 2 minutes, stirring occasionally, until boiling. Reduce heat to medium-low. Simmer for 10 minutes, stirring occasionally. Discard bay leaf. Transfer to greased 2 cup baking dish. Smooth top. Bake, covered, in 375°F oven for 15 minutes.
  • Sprinkle with cheese. Bake uncovered for about 20 minutes until potato is tender and cheese is golden. Makes about 2 cups.
