INGREDIENTS

  • 1 1-lb. tin pink or red salmon
  • 1 tablespoon lemon juice
  • Dash of cayenne
  • 1 teaspoon salt
  • 2 eggs, beaten
  • 2/3 cup chopped celery
  • 1 1/2 cups bread crumbs
  • 1/2 teaspoon baking powder
  • 1/2 cup evaporated milk
  • 1/2 cup liquid (fish juice and water)
  • Tomato Sauce (search recipes), optional
  • Cheese Sauce (search recipes). optional
  • Onion Sauce (search recipes), optional

DIRECTIONS

  • Drain salmon, discard skin and bones, and flake.
  • Add remaining ingredients and mix well.
  • Shape into a loaf and place in a buttered baking pan.
  • Bake in a moderate oven (350°F) until brown and firm, about 30 to 40 minutes. Serve with Tomato or Cheese sauce. Salmon loaf mixture may be made into patties and pan-fried.
