INGREDIENTS

  • 1 pork tenderloin, 1 1/4 lbs.
  • 2 T tomato paste
  • 2 T fennel seeds
  • 3 T vegetable oil
  • 2 cloves garlic, pressed
  • 2 bunches Swiss chard, chopped
  • 1 can (14oz) no-salt-added white beans, rinsed and drained
  • 1/2 t + 1/8 t salt
  • 2 t pepper
  • 3 medium sweet potatoes, cut into 1/2 in. chunks

DIRECTIONS

  • Place tenderloin on large rimmed baking sheet; brush with tomato paste. Sprinkle with fennel seeds, 1/2 t salt, and pepper.
  • Toss sweet potatoes with 2 T vegetable oil; add to pan. Roast in 450°F. oven 25 minutes or until pork is cooked (145°F.).
  • In 5 qt. saucepot, heat 1 T vegetable oil on medium. Add garlic; cook 1 minute, stirring. Add Swiss chard and 1/8 t salt. Cook 7 minutes or until crisp tender, stirring.
  • Add white beans. Serve with pork and potatoes.
