INGREDIENTS

  • 3 to 4 lb. beef chuck roast
  • 2 Tbl butter or vegetable oil
  • 1 1/2 teaspoons Lawry's Seasoned Salt®
  • 1 Cup chicken broth

DIRECTIONS

  • Place a heavy bottomed skillet over medium-high heat and allow skillet, preferably cast iron, to heat until hot.
  • Preheat oven to 325°F. Place the butter into the skillet to melt. Swirl butter to cover the bottom of the skillet. Pat both sides of the roast dry. Once the butter begins to brown just slightly, place the roast into the skillet and allow to brown thoroughly. Once browned turn the roast and brown the other side.
  • Once the second side of the roast is brown, add the chicken broth to the skillet. Tightly cover the skillet with aluminum foil and place the roast into the oven, on the middle rack, and bake for 1 1/2 hours.
  • After 1 1/2 hours, reduce the oven temperature to 250°F and cook the roast for an additional 2 hours. Enjoy!!
