INGREDIENTS

  • 1/4 cup fresh cilantro, chopped
  • 1 15 oz. can refried beans, warmed
  • romaine lettuce, shredded
  • For Pico de Gallo:
  • 4 plum tomatoes, cut into 1/4 in. pieces
  • 1 small jalapeno, finely chopped
  • 1/2 small red onion, finely chopped
  • 2 Tbsp fresh lime juice
  • 1/4 tsp each salt and pepper
  • 8 tostadas

DIRECTIONS

  • In a medium bowl, toss tomatoes, jalapeno, red onion, lime juice and salt and pepper.
  • Fold in cilantro.
  • Top tostadas with refried beans, shredded lettuce and the pico de gallo.
