INGREDIENTS

  • 1 1/2 pounds Red Snapper fillets, fresh or frozen
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon paprika
  • 1 1/2 cups chopped tomatoes
  • 2/3 cup chopped parsley
  • 1/2 cup sliced pimiento-stuffed olives
  • 1/3 cup diced, peeled lemon

DIRECTIONS

  • Thaw fish if frozen. Preheat oven to 400 degrees. Sprinkle with salt, pepper and paprika.
  • Place fish in a shallow 12 x 8 x 2-inch baking dish. Combine remaining ingredients and spread over top of fish. Cover.
  • Bake at 400 degrees for 10 minutes.
  • Uncover and continue baking 18 to 20 minutes longer or until fish flakes easily when tested with a fork.
