INGREDIENTS

  • 1 lb. Mullet red roe
  • 1/2 cup corn meal
  • 2 quarts vegetable oil
  • Salt to taste

DIRECTIONS

  • Place the cooking oil in a deep pot over medium-high heat and heat oil to 350°F.
  • Separate the two halves of the whole roe by gently pulling them apart, starting at one end and pulling down the length of the roe.
  • Lightly salt and then bread the roe with corn meal (House Autry Seafood Breading does even better). This is easily done by placing the corn meal into a plastic bag, adding the roe, and then gently tossing the roe around inside the bag to coat.
  • When the oil reaches 350°F, slowly and gently place the roe into the hot oil. Time the cook and remove the roe at 4 minutes.
