INGREDIENTS

  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1/3 cup firmly packed brown sugar
  • 1 1/2 cups uncooked oats
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 eggs, beaten
  • 1/2 cup chopped pecans

DIRECTIONS

  • Mix flour, baking powder, baking soda, and salt in a bowl. Stir in brown sugar and oats. Add remaining ingredients; stir only until dry ingredients are moistened.
  • Pour batter into a greased 9x5x3-inch loaf pan.
  • Bake at 350°F 50 to 55 minutes. Cool on wire rack about 10 minutes. Remove from pan; cool thoroughly.
  • Wrap and store. (Bread will slice better if stored a day before slicing.)
