INGREDIENTS

  • 1 lb. dried large lima beans
  • 1 tablespoon vegetable oil
  • 6 quart pressure cooker

DIRECTIONS

  • Place dried beans into a colander and rinse well. Shift through beans to ensure there are no small rocks or other foreign objects in the beans.
  • Place the beans into the pressure cooker pot and just cover with water. Stir. Heat beans to boiling and boil for 2 minutes. Remove from heat. Cover and let stand for 1 hour.
  • Drain beans in a colander. Return beans to the pot of the pressure cooker. Add 3 cups of water.
  • Add 1 tablespoon of vegetable oil to prevent frothing. Bring up to pressure on medium heat. Cook for 30 minutes. Following your pressure cooker instructions for opening the cooker.
