INGREDIENTS

  • 1 tbsp oil
  • 4 boneless pork chops
  • 1 or 2 cooking apples, peeled, cored and sliced
  • pat of butter
  • 1 or 2 garlic cloves, finely chopped
  • 1 tsp sugar
  • 2/3 cup dry (hard) cider
  • 1 tsp cider vinegar
  • 1 tbsp wholegrain mustard
  • 2 tsp chopped fresh thyme
  • salt and ground black pepper
  • sprigs of thyme, to garnish
  • To serve:
  • mashed potatoes
  • steamed buttered cabbage (search Bobbie's Delicious Steamed Cabbage)

DIRECTIONS

  • Heat the oil in a large heavy frying pan over a medium heat, and cook the chops for 10-15 minutes, browning well on both sides. Remove the chops from the pan and keep warm.
  • Add the butter and apples to the frying pan and cook until the juices begin to turn brown.
  • Add the garlic and sugar, and cook for 1 minute, then stir in the cider, cider vinegar, mustard and chopped thyme. Boil for a few minutes until reduced to a saucy consistency. Season to taste.
  • Place the chops on warmed serving plates, spoon over the sauce, garnish with the thyme sprigs and serve.
