INGREDIENTS

  • 4 6 to 8 ounce pork chops
  • 6oz molasses
  • 1 cup strong cold coffee
  • 2 Tbl. apple cider vinegar
  • 1 Tbl. Dijon mustard
  • 2 cloves garlic, minced
  • 1 tsp. kosher salt
  • 1/2 tsp. ground ginger
  • 6 to 8 sprigs fresh thyme
  • 1/2 tsp. black pepper

DIRECTIONS

  • Ingredients should be placed into an air tight container. For example, a one gallon zip lock bag works well.
  • Place pork chops into container.
  • Mix remaining ingredients together well. Pour marinade over pork chops, moving chops around to ensure marinade coverage of all chop surfaces. Remove as much air as possible from the container and seal air tight. Place into refrigerator for at least 2 hours, overnight even better.
  • To cook, remove chops from marinade. Pour marinade into medium sauce pan, bring to a boil, reduce heat and cook over medium heat until marinade is reduced to a thick sauce. Cook pork chops as normal and serve with reduced sauce.
