INGREDIENTS

  • 1 to 2 tsp hot sauce
  • 1 Tbsp olive oil or butter
  • 3 oz thinly sliced deli ham, torn into small pieces
  • 1 medium roasted red pepper, cut into 1/4 in. pieces
  • 2 scallions, thinly sliced
  • 2 oz extra-sharp Cheddar cheese, coarsely grated; 1/2 cup
  • 2 Tbsp cream cheese, cut into small pieces
  • 1 Tbsp olive oil or unsalted butter
  • For Scrambled Eggs:
  • 8 large eggs
  • Kosher salt and pepper

DIRECTIONS

  • Whisk together the egg mixture (eggs, 1 Tbsp water, salt and pepper) plus the hot sauce. Heat the oil or butter in a large nonstick skillet over medium heat. Add the deli ham and cook, tossing occasionally , until beginning to brown around the edges, 2 to 3 minutes. Add the pepper and cook, tossing, for 1 minute; transfer to a plate.
  • Add the egg mixture to the skillet and cook as directed below.
  • Fold in the ham and pepper, scallions, cheese, and cream cheese.
  • For Scrambled Eggs: In a large bowl, whisk together the eggs, 1 Tbsp water and 1/2 tsp each salt and pepper. Heat the oil or melt the butter in a 10-in. nonstick skillet over medium heat. Add the eggs and cook, stirring with a rubber spatula every few seconds, to desired doneness, 2 to 3 minutes for medium-soft eggs.
