INGREDIENTS

  • 3 cloves garlic
  • Oil 1 inch deep,for frying
  • Small whole fish, scaled and cleaned (use 1 whole fish per serving)
  • Flour
  • Salt
  • 4 fresh limes (cut 3 limes into wedges and thinly slice the other lime)
  • Cebolla en Lima (search recipes)
  • Salsa, choose your favorite

DIRECTIONS

  • Place garlic cloves in the oil and heat oil to 370° F. When garlic is toasted golden brown, remove and discard it.
  • Score each fish by making diagonal cuts along the sides with a sharp knife. Coat the fish with flour and salt lightly. Cook the fish in the preheated oil until golden brown on one side; then turn and cook until golden on the other side, approximately 3 to 4 minutes on each side. The fish should flake easily with a fork; cooking time will depend on the size and thickness of the fish. Drain on paper towels.
  • Place the fish on a serving plate, arrange several Cebolla en Lima on each fish, top with a thin lime slice, and serve with additional lime wedges and salsa.
