INGREDIENTS

  • 2 cups long grain white rice
  • 1 1/2 Tbl. unsalted butter
  • 3 cups water or 3 cups chicken stock
  • 1/2 to 1 tsp. kosher salt

DIRECTIONS

  • Place 3 cups of water, which may be substituted by 3 cups of chicken stock or combination thereof, into a pot and bring to a boil.
  • While the water is coming to a boil, place a pot large enough to cook two cups of rice on high heat. Place 1 1/2 Tbl. unsalted butter into the pot to melt.
  • As the butter melts, swirl the pot to prevent the butter from burning. Just as the butter browns, add 2 cups of long grain white rice to the pot and stir well to coat all grains of rice with butter.
  • Stir the rice, almost constantly, until the rice begins to brown. When the rice browns, carefully, take the boiling water and pour into the pot of rice. The rice is hot and the water will react vigorously with the rice - so be careful. Once the water is in the pot with the rice, stir the rice to mix well, reduce the heat to low (simmer), cover and cook for 17 minutes. Enjoy!!
