INGREDIENTS

  • 4 pan-dressed croakers, 1/2 to 3/4 pound each, or other pan-dressed fish, fresh or frozen
  • 1 cup milk
  • 1 cup crushed rich crackers
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon paprika
  • 2 tablespoons butter or margarine, melted
  • Lime wedges
  • For Parmesan Stuffing:
  • 1 cup crushed rich crackers
  • 1/2 cup dry curd cottage cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg, well beaten
  • 1 tablespoon chopped parsley
  • 1/4 teaspoon oregano leaves
  • 1/4 teaspoon basil leaves
  • 1/4 teaspoon salt
  • 1/8 teaspoon white pepper

DIRECTIONS

  • Thaw fish if frozen. Preheat oven to 350 degrees, Rinse and thoroughly dry fish.
  • Pour milk into a shallow dish or pie plate. In another pie plate, combine crushed crackers, cheese and paprika. Dip fish in milk and then in cracker mixture. Place on a well greased 10 x 16 inch baking pan.
  • Stuff fish with approximately 1/3 cup of Parmesan Stuffing. Close opening with small skewers or wooden toothpicks. Drizzle melted butter over fish.
  • Bake in moderate oven, 350 degrees, for 30 minutes or until fish flakes easily when tested with a fork. Remove skewers. Garnish with lime wedges.
  • Parmesan Stuffing: Combine all ingredients and mix thoroughly.
