INGREDIENTS

  • 4 5 to 6-ounce fresh or frozen salmon fillets, about 1 inch thick
  • 1/4 cup orange marmalade
  • 2 tablespoons lime juice or lemon juice
  • 1 tablespoons soy sauce
  • 1/4 teaspoon anise seeds, crushed
  • 1/8 teaspoon cayenne pepper

DIRECTIONS

  • Thaw fish, if frozen. Rinse fish; pat dry with paper towels. Sprinkle fish with salt and ground black pepper.
  • For glaze, in small bowl, combine marmalade, lime juice, soy sauce, anise seeds and cayenne pepper; set aside.
  • Place fish fillets, skin sides up, on greased rack of uncovered grill directly over medium coals. (Or place fish in greased grill basket; place over medium coals.)
  • Grill for 6 minutes. Turn fish; brush with glaze. Grill for 6 to 9 minutes more or until fish flakes easily with a fork, brushing frequently with glaze. Using a wide metal spatula, transfer fish to serving platter.
  • In small saucepan, bring any remaining glaze to boiling. Spoon over fish.
