INGREDIENTS

  • 1 1/2 cups sliced fresh okra
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ground oregano
  • 1 (16-ounce) can whole tomatoes, undrained and chopped
  • 1 (7-ounce) can whole kernel corn, undrained

DIRECTIONS

  • Combine all ingredients in a heavy nonstick skillet. Bring mixture to a boil.
  • Reduce heat; cover and simmer 15 to 20 minutes or until okra is tender.
