INGREDIENTS

  • 1 cup lukewarm water
  • 2 Tbl milk
  • 2 tsp brown sugar
  • 1 tsp salt
  • 1 Tbl shortening
  • 1 Tbl cornmeal
  • 1 Tbl extra virgin olive oil
  • 1 package yeast
  • 3 cups all-purpose flour or unbleached white flour

DIRECTIONS

  • In a large bowl, combine water, milk, brown sugar, salt and shortening and mix well with an electric mixer on low for about 1 minute. Add cornmeal, olive oil, and yeast and continue mixing for another minute. Let it dough rest for 5 minutes.
  • Gradually add the remaining flour, mixing with your hands before adding more flour. Turn the dough out on a lightly floured surface and knead the dough for 8 to 10 minutes. (Knead the dough vigorously, don't be afraid of hurting the dough.)
  • Form the dough into a ball and place in a lightly greased covered bowl. Place the dough in a warm location (70° to 85°F), and let it rest for about 45 minutes. Push down the dough and make a 12 inch to 14 inch circle with your hands or a rolling pin.
  • Rub the olive oil on a baking sheet and place the dough on it. Let dough rest for another 45 minutes. Dough is now ready to make a pizza.
