Lobster Bisque creates a very tasty bisque by cooking tapioca, salt, pepper, paprika, minced onion, milk and light cream in a double boiler before adding lobster and butter to complete this delicious lobster bisque.

INGREDIENTS

  • 2 Tbl quick-cooking tapioca
  • 1 1/4 tsp salt
  • 1/8 tsp pepper
  • 1/8 tsp paprika
  • 1 Tbl minced onion
  • 3 cups milk
  • 1 cup light cream
  • 1 cup lobster
  • 2 Tbl butter

DIRECTIONS

  • Combine tapioca, salt, pepper, paprika, onion, milk and cream in top of double boiler. Cook for 10 to 15 minutes over rapidly boiling water, stirring frequently.
  • Drain lobster; cut into pieces. Add lobster and butter to cream mixture; mix well.
  • Let stand over hot water for 15 to 20 minutes to heat thoroughly and blend flavors.
  • Pour into soup bowls; garnish with a thin slice of firm ripe tomato sprinkled with chives. May be garnished with grated lemon rind.
