INGREDIENTS

  • 1 package chili seasoning mix
  • 2 tablespoons flour
  • 2 teaspoons salt
  • 4 lamb shanks
  • 3 tablespoons cooking oil
  • 1 can (28 ounces) tomatoes (undrained)
  • 1 can (15 ounces) chili style beans
  • 1 can (15 ounces) golden hominy (optional)
  • 2 tablespoons cornmeal

DIRECTIONS

  • Combine 2 tablespoons chili seasoning mix, flour, and salt. Place in a large plastic bag; add shanks to bag and shake to coat with flour mixture. Heat oil in a large skillet; add shanks and brown on all sides.
  • Place lamb in casserole dish; mix tomatoes with remaining chili seasoning; pour over shanks.
  • Bake at 325°F 1 hour. Remove casserole from oven; skim off fat. Add beans, hominy (if desired) and cornmeal to casserole, stirring gently to combine.
  • Return to oven and continue to bake 1 1/2 hours, or until sauce is slightly thickened and lamb is tender.
