INGREDIENTS

  • 1/2 cup olive oil
  • 1 cup soy sauce
  • Stalks of 5 green onions, chopped
  • 1 large clove garlic, minced
  • 1/2 tsp. freshly ground black pepper
  • 1/4 tsp. dry ginger
  • 1/4 tsp. dry mustard
  • 1 fryer (about 3 pounds)

DIRECTIONS

  • Combine all ingredients, except chicken, to make a sauce. Cut up chicken into serving pieces and marinate in the sauce from 1 to 3 hours. Turn the chicken several times so that all parts are thoroughly seasoned.
  • Place chicken in shallow roasting pan. Pour over the sauce. Broil under moderate heat about 10 minutes on each side or until browned, then broil very slowly until tender.
  • Baste several times with the sauce in the pan while broiling. Serve with steamed rice.
