Johnny's Chicken Salad is a high end restaurant salad using chicken tenders, onion, celery, salt, black pepper, granulated garlic, mayonnaise and vinegar and creates a deliciously tasty chicken salad.

INGREDIENTS

  • 1 lb. chicken tenders or chicken breast
  • 3 Tblsp. finely minced onion
  • 5 Tblsp. finely minced celery
  • 1 1/2 tsp. salt, or to taste
  • 1 1/2 tsp. black pepper, or to taste
  • 1 1/2 tsp. granulated garlic (not garlic salt)
  • 6 Tblsp. mayonnaise
  • 1/2 Tblsp. vinegar

DIRECTIONS

  • Place tenders in pot with enough water to cover. Bring to boil. Stir tenders occasionally as water comes to boil. If using chicken breast, place breast in water and bring to boil. Boil about ten minutes. Remove to cutting board and cut breast at thickest part to ensure done. Return to boil if necessary. Or, check with thermometer to ensure breast is at 170°.
  • Drain tenders in colander and rinse with cold water until cool (same for breasts). Move tenders to preparation table. Remove the tendon from each tender.
  • Tenders (or breast) must be shredded by hand, spatula, knife, or other method until tenders are finely shredded and no chewable pieces are left. Set tenders aside.
  • Finely mince the onion and celery. Add onions and celery to the tenders. Mix well. Add salt and mix well. Add garlic and mix well. In separate bowl, place mayonnaise and then add vinegar - mix mayonnaise/vinegar mixture until mayonnaise is smooth and liquid. Add mayonnaise mixture to tenders and mix well ensuring all parts of the tenders are coated with mayonnaise.
