INGREDIENTS

  • 4 5 - 6 oz sea bass fillets or other firm white flesh fish
  • 2 tbsp jerk seasoning paste (search recipes)
  • 1 tbsp brown sugar, packed
  • 1/2 tsp allspice, ground
  • 1/2 tsp grated lime zest
  • 1/2 tsp grated orange zest
  • 6 lime slices
  • 6 orange slices

DIRECTIONS

  • Combine jerk seasoning paste, sugar, allspice, lime and orange zest and rub over the fillets. Chill, covered, for 2 hours. Place fillets in greased foil pan and cover tightly with foil.
  • Cook on direct medium-high heat for about 15 minutes until fish flakes easily when tested with a fork.
  • Grill lime and orange slices on direct medium-high heat for 2 to 3 minutes per side until browned.
  • Arrange fillets with lime and orange slices on a large serving plate. Serves 4.
