INGREDIENTS

  • 2 1/2 to 3 lb. whitefish fillets
  • 1/2 cup soy sauce
  • 1/2 cup flour
  • Cornstarch
  • 1 cup milk
  • 1 egg
  • 3 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 20-oz cans pineapple chunks
  • 3/4 cup sugar
  • Cooking oil

DIRECTIONS

  • Wash fish; pat dry. Cut into 1 1/2-inch squares. Marinate in soy sauce for 20 to 30 minutes, turning once or twice. Combine flour, 1/2 cup cornstarch, milk, egg, baking powder and seasonings.
  • Pour pineapple into saucepan, stir in sugar. Heat through.
  • Pour 1 1/2 inches oil into heavy skillet. Heat to 375°F. Drain fish; dip quickly into batter. Drain; drop into hot oil. Keep temperature of oil constant. Cook for 1 to 2 minutes or until crisp. Remove to paper towel-lined pan; keep in warm oven.
  • Mix 1 Tbl cornstarch with 1/4 cup water; add to pineapple. Cook until syrup thickens. Arrange pineapple sauce on warm serving platter. Place fish carefully on top.
