INGREDIENTS

  • 2 pounds skinned Speckled Trout (or other fish) fillets, fresh or frozen
  • 2 tablespoons lemon juice
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup butter or margarine, softened
  • 3 tablespoons mayonnaise or salad dressing
  • 3 tablespoons chopped green onions
  • 1/4 teaspoon salt
  • 1/8 teaspoon liquid hot pepper sauce

DIRECTIONS

  • Thaw fish if frozen. Place fillets in a single layer on a well-greased 15 x 10-inch bake-and-serve platter. Brush fillets with lemon juice and let stand for 10 minutes.
  • Combine remaining ingredients. Broil fillets about 4 inches from source of heat for 6 to 8 minutes or until fish flakes easily when tested with a fork.
  • Remove from heat and spread with cheese mixture. Broil 2 to 3 minutes longer or until lightly browned.
