INGREDIENTS

  • 1 package (2 pounds) frozen chopped hash brown potatoes, partially defrosted
  • 1 1/2 teaspoons salt
  • Few grains pepper
  • 1/4 cup coarsely chopped green pepper
  • 1 jar (2 ounces) sliced pimentos, drained and chopped
  • 2 cups milk
  • 3/4 cup fine dry enriched bread crumbs
  • 1/3 cup soft butter
  • 2/3 cup shredded pasteurized process sharp American cheese

DIRECTIONS

  • Turn potatoes into a buttered shallow 2-quart baking dish, separating into pieces.
  • Sprinkle with salt and pepper. Add green pepper and pimentos; mix lightly. Pour milk over potatoes. Cover with aluminum foil.
  • Cook in a 350°F oven 1 1/4 hours, or until potatoes are fork-tender.
  • Remove foil; stir potatoes gently. Mix bread crumbs, butter, and cheese. Spoon over top of potatoes. Return to oven and heat 15 minutes, or until cheese is melted.
