INGREDIENTS

  • 6 fresh green peppers
  • 6 ears of fresh corn
  • 1 lb. ground beef
  • 1/4 c. chopped fresh onion
  • Salt and pepper to taste

DIRECTIONS

  • Cut tops from the green peppers and remove seeds and membranes. Cook in boiling, salted water until partially done, then drain.
  • Cut the corn from cobs and place in a skillet. Add 1/2 cup water and cook over low heat, stirring frequently, until water has evaporated.
  • Add the ground beef, onion, salt and pepper and cook until beef is brown, stirring occasionally. Stuff the green peppers with corn mixture and place in a baking pan.
  • Bake at 350 degrees for about 30 minutes. Green peppers may be stuffed with other mixtures, if desired.
