INGREDIENTS

  • 4 cups thinly sliced onions, halves and rings of small onions
  • 2.5 cups buttermilk
  • 2 cups + 2 tbsp all-purpose flour
  • 2 tbsp + 2 tsp Kosher salt
  • 3/4 tsp Fresh ground pepper
  • 4 cups Vegetable oil
  • 4 cups green beans
  • 12 oz mushrooms, cut into chunks
  • 2 tbsp butter, unsalted
  • 2 cloves garlic, minced
  • 1/4 tsp nutmeg, freshly ground
  • 1 cup chicken broth
  • 1 10.5 ounce can cream of mushroom soup
  • 1 cup half and half

DIRECTIONS

  • Soak onions in buttermilk for at least 10 minutes. In a shallow dish add flour, 1 tsp salt, and 1/4 tsp pepper and mix well. In a large pan heat vegetable oil to 375 degrees. Dredge buttermilk soaked onions in flour until well coated and add to oil, frying in batches until golden brown then remove form oil with a slotted spoon and drain on a paper towel lined plate. Continue with all of the onions with additional paper towel lined plates after a double layer of onions are on one.
  • Bring one gallon of water with 2 tbsp salt to a boil. Add prepped green beans to water and boil about 10 minutes or until beans are al dente. Place cast iron skillet over medium-high heat and add butter. Once butter has melted, add mushrooms with 1 tsp kosher salt plus black pepper. Cook stirring occasionally until mushrooms begin to give up some liquid. Add garlic and nutmeg. Stir well.
  • Add 2 tbsp flour by sprinkling evenly over mushrooms - use sieve for even distribution. Move skillet contents around continuously for about one minute to cook flour. Place chicken broth and cream of mushroom soup into a bowl and whisk to breakdown soup. Add soup mixture to skillet and stir constantly for one minute. Add half and half and stir to mix well. Reduce heat to low and stir occasionally while sauce thickens, about 6 to 6 1/2 minutes.
  • Heat oven to 400° F. Begin to build casserole: Add about 1/4 of the onions to the mushroom mixture and stir. Add all of the beans and fold beans into sauce; flatten top a little. Place remaining onions on top of beans covering evenly. Cook in oven for 15 minutes or until nice and bubbly.
