INGREDIENTS

  • 2 chicken leg thigh quarters
  • 2 Tbl flour
  • 1/4 cup vegetable oil
  • 1 medium onion, sliced
  • 2 Tbl fresh ginger, grated
  • 10 cloves garlic, minced
  • For Sauce:
  • 2 tsp soy sauce
  • 1/2 cup water
  • 1 Tbl white vinegar
  • 1/4 cup tomato puree
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp flour

DIRECTIONS

  • Place 2 Tbl flour into a plastic or paper bag. Add chicken and toss chicken to coat well with flour. Heat a large skillet over medium-high heat. When skillet is hot, add oil. When oil begins to shimmer, add chicken quarters, skin side down and cook until skin is browned, but not burnt. Reduce heat to medium. Flip chicken quarters over.
  • Continue to cook chicken, flipping every two to three minutes until chicken registers at least 170°F on a thermometer or juices run clear. Remove chicken to a serving platter. (Note: oil will splatter while cooking chicken. Using a cooking screen will reduce splatter.) While chicken cooks combine sauce ingredients in a bowl.
  • Add onion, ginger and garlic to the hot skillet and stir to coat well with oil. Continue to cook, stirring occasionally, until onion is translucent.
  • When onion is translucent, add sauce ingredients and stir well. When sauce begins to thicken, return chicken to the skillet, skin side up. When sauce is thick, remove chicken to serving platter and top chicken with the sauce onion mixture. Serve with rice or noodles of choice.
