INGREDIENTS

  • 4 pears, cored
  • 1 large melon wedge
  • 1 can Mandarin orange wedges
  • 1/2 can pineapple
  • Green grapes (optional
  • 2 pints vanilla ice cream
  • 1 cup fresh orange juice
  • Orange rind

DIRECTIONS

  • Cut the pears and melon wedge in pieces and mix with the canned fruits.
  • Pour in a little of the syrup from the cans. Cover and let salad stand in refrigerator until chilled.
  • Divide the ice cream into 8 dishes. Distribute fruit on top of ice cream.
  • Just before serving, pour on the fresh orange juice. Sprinkle with finely slivered orange rind or coconut.
