INGREDIENTS

  • 2 sm. eggplant
  • 1 egg, beaten
  • 1 c. bread crumbs
  • 1 tsp. salt
  • Dash of pepper

DIRECTIONS

  • Rinse the eggplant and slice. Dip in egg.
  • Mix the bread crumbs, salt and pepper and coat eggplant slices with bread crumbs.
  • Fry in small amount of fat or oil in a skillet over low heat for about 3 minutes on each side.
