INGREDIENTS

  • 1 lb. beef liver, sliced
  • 3 tablespoons vegetable oil
  • 1 cup House-Autry Chicken Breading
  • 1 medium onion, sliced
  • Cold water

DIRECTIONS

  • Place the chicken breading into a plastic or paper bag. Pat the slices of liver dry with a paper towel. Place the slices individually into the breading bag and toss to coat well. Remove coated slice to a plate. Repeat process to coat all slices.
  • Place a large skillet over medium-high heat. Once skillet is heated, carefully add the oil and swirl to coat the bottom of the skillet. Add the sliced onion and cook until very tender and slightly browned. Set aside.
  • Removed thoroughly browned slices to a plate an set aside. Add oil to the skillet to have about 3 tablespoons of oil in the skillet. Stir with a wooden spoon to scrape the brown bits from the bottom of the skillet. When the oil is hot, sprinkle 3 tablespoons of the chicken breading over the skillet. Stir the breading and continue stirring until the breading is brown and the oil has been absorbed. The flour mixture should look a little dry.
  • Allow the skillet to heat for about 1/2 a minute. Carefully, pour about a cup of cold water into the skillet and onto the breading. As soon as the water is in the skillet, stir to incorporate into the breading. The breading will gradually begin to breakdown as more and more water is slowly added while stirring. Continue stirring and slowly adding small amounts of water until a gravy is formed. Once the gravy has formed, return the liver and onion to the skillet to heat through. Gravy is excellent with mash potatoes or rice.
