INGREDIENTS

  • 1 stewing chicken, 3 pounds, cut-up
  • 1 medium onion
  • 4 whole black peppers
  • 2 cloves
  • Tip of bay leaf
  • 1 Tbl. salt
  • 3 Tbl. chicken fat
  • 7 Tbl. flour
  • 3 cups chicken broth
  • 1/2 tsp. grated lemon rind
  • 1/4 tsp. black pepper
  • 2 to 3 Tbl. white wine
  • 1 egg yolk
  • 1/4 cup cream

DIRECTIONS

  • Place chicken in large pot and just cover with boiling water. Add onion, whole black peppers, cloves, bay leaf, and salt. Cook gently until meat is tender, 2 1/2 to 3 hours. Lift out chicken and strain broth.
  • Prepare fricassee gravy: Mix chicken fat and flour in saucepan. Add 3 cups broth and place over heat. Cook, stirring constantly, until uniformly thickened.
  • Add lemon rind and pepper. Add wine. Taste for additional seasoning. Simmer about 5 minutes. Place chicken in gravy to heat.
  • Blend egg yolk and cream in sauce dish or cup. To it add, while stirring, some of the hot gravy. Then pour back into chicken and gravy mixture and cook 2 or 3 minutes stirring constantly. Serve promptly. Serves 5 to 6.
