Fresh Tomato Sauce for Pizza Recipe is very good and has so much more taste than store bought with it's great combination of tomatoes, olive oil, garlic, fresh basil or herbes de Provence, salt and white wine.

INGREDIENTS

  • 3 medium tomatoes (about 1 lb)
  • 2 tablespoons olive oil
  • 1 clove garlic, minced or pressed
  • 1 tablespoon chopped fresh basil or 1/2 teaspoon dried basil or herbes de Provence
  • 1/4 teaspoon salt
  • 1/4 cup dry white wine

DIRECTIONS

  • Fill a pot big enough for 2 quarts of water with one quart of water and bring to a boil. Cut an X into the bottom of each tomato skin. Place the tomatoes into the boiling water and boil until the skin of the tomatoes begin to curl. Remove tomatoes from water and rinse under cold water.
  • Peel the tomatoes. Quarter each tomato and remove the seeds and discard. Chop each tomato finely.
  • Heat oil in a 2-quart saucepan over medium-high heat. Add tomatoes and garlic. Mix in basil, salt, and wine. Bring to a boil, cover, reduce heat, and simmer for 15 minutes.
  • Uncover and cook over medium-high heat, stirring often as sauce begins to thicken, until sauce is thick and reduced to about 1 cup (15 to 20 minutes).
